This Potato and Herring Salad recipe, akaKartoffel und Heringsalat, comes from my Mutti's handwritten cookbook. She usually made it as one of her party buffet recipes.

As well, she often made this traditional German food as a special treat for our summer picnics. To differentiate this salad from potato salad, Mutti would add slices of pickled red beets.

Mutti's Potato and Herring Salad Recipe – Kartoffel und Heringsalat (4)

The resulting pink-colored herring salad became her trademark. I used to think it was her special way of making this salad special. It wasn't till I was older and had traveled to Germany that I realized adding beets to herring and potato salad was normal.

Which herring to use ...

Use pickled herring that's sold in jars. Drain well and cut the herring into smaller pieces. If onions are in the jars, chop these and add to the salad as well.

Ifthe pickled herring you've bought still has the back-bones in it,you'll need to remove this. Just cut along the back-bone and pull theflesh away from it.

You'll find a different version of the herring salad recipe minus the potatoes as Heringsalat,a great treat that my kids loved when they were little. Sweet and sourand creamy, too! Herring recipes that kids would love. Who would believethat?

FAQs

Why don't you peel potatoes for potato salad? ›

There's no reason at all, so my advice is to leave the skins on. The skin on a potato adds a nice texture and flavor to the potato salad and it's also the healthiest part.

How to keep potatoes from falling apart when making potato salad? ›

Don't Undercook (or Overcook) the Potatoes

Poke them with a fork after the water has boiled for 5 minutes (or, if steaming, after 15 minutes). Don't wait until they fall apart when pierced with a fork.

Should you salt the water when boiling potatoes for potato salad? ›

The vegetable absorbs the water it's cooked in, so if you just boil them in unseasoned water, you'll end up with tasteless taters that no amount of mayo, herbs, or bacon bits can help. Adding salt to the water seasons them from the inside out so you'll be able to start with the perfect potatoes for your dish.

Why you shouldn't peel your potatoes? ›

"The skin of the potato is very high in fibre, potassium, vitamin C, vitamin B — all of those good, healthy things are in high concentration in the skin."

Why is my potato salad gummy? ›

Cook them too long, and you'll have mushy potatoes. → Follow this tip: The potatoes should be cooked so they're soft, tender, and creamy. Cook them until they are just tender when pierced with a fork. Depending on the type of potato and size of the potato cubes, this will take between eight and 12 minutes.

Why does my potato salad get soggy? ›

Potatoes can retain moisture. To prevent this, drain the potatoes very well in a colander or pot. Allow all the steam to escape the potatoes before mixing them with the dressing and other ingredients. Steaming the potatoes instead of boiling them is a good way to ensure that excess moisture isn't trapped inside.

Do you rinse potatoes in cold water after boiling? ›

Rinsing potatoes helps remove excess starch, so it is recommended to rinse the potatoes before cooking. To ensure even more starch is out of the way, it's recommended that they even be quickly rinsed after boiling. We recommend using hot water for rinsing after boiling and cold water prior to boiling.

What kind of potatoes are best for potato salad? ›

Russet, Yukon Gold, or red potatoes (new potatoes) are all excellent for potato salad. They do cook at different rates so be sure to adjust cook time depending on which type of potato you select.

What if I put too much mustard in my potato salad? ›

You've got two options. The first option is to cook more potatoes and make more potato salad, adding more of every ingredient except mustard. Doing so will get the mustard content in equilibrium with the rest of the flavors in the salad. Your other option is to adjust the seasonings to compliment the…

Can you peel potatoes the night before for potato salad? ›

If you're here, you'll probably be glad to know that yes, you can peel and cut potatoes the day before you plan to serve them — and that it's super easy!

How long does fresh homemade potato salad last? ›

According to StillTasty.com, prepared potato salad—whether homemade or store-bought, dressed with vinegar and oil or mayonnaise—will stay fresh in the refrigerator for up to five days if stored properly.

What's the difference between salad potatoes and normal potatoes? ›

Salad Potatoes can often be described as “l*ttle Potatoes” or “Small Potatoes” and people mistakenly take them for potatoes too small to be like normal potatoes. However these potatoes are grown specifically for this smaller specification and skin finish.

Is it good to eat potato without peeling? ›

Eat the skin to capture all the russet potatoes nutrition. The potato skin has more nutrients than the interior of the potato. It has lots of fiber, about half of a medium potato's fiber is from the skin. Baked Idaho® Potato with salsa makes for a low calorie healthy lunch, try it!

Can you can potatoes without peeling them? ›

As I said, I merely took the baton and crossed the finish-line to show everyone, 1) leaving your skin on the potato is safe so long as you thoroughly scrub and rinse your potatoes prior to starting the recipe and 2) the dry pack canning method is safe and effective in home canning.

Can you make potatoes without peeling? ›

So you should think of the potato's peel as its protective jacket. If it's removed before boiling, the flesh will soak up too much of the water in the pot. When you go to mash the potatoes, you'll end up with a watery, gluey mash.
