It’s Mad Monday again! The first Monday of every month where I share with you a recipe that is very quick, but also is popular and a great family meal.

In my pre-Thermomix days I rarely cooked with pork as I could never find a commercial sauce I liked the taste of.

I received this recipe from a friend, pork was on special and now we have another family favourite.

ThermoFun - MAD MONDAY – Paprika Pork Recipe

Thermomix Paprika Pork - ThermoFun | Thermomix Recipes & Tips (2)

Ingredients

  • handful fresh parsley
  • 2 garlic cloves, peeled
  • 1 onion, peeled and halved
  • 20g olive oil
  • 500g pork fillet, cubed
  • 250g mushrooms, sliced
  • 1½ tablespoon paprika, sweet
  • 1 teaspoon cumin, ground
  • pinch black pepper, ground
  • 1 tablespoon ThermoFun Tomato Paste
  • 20g TM vegetable stock concentrate
  • 200g boiling water from kettle
  • 100g sour cream

To serve

  • cooked egg noodles

Instructions

  1. Place parsley into TM bowl and chop 3 sec / speed 8. Set aside.
  2. Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5.
  3. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
  4. Add pork and cook 5 mins / 100°C / speed 1 / Reverse.
  5. Add mushrooms, paprika, cumin, pepper, tomato paste, stock and boiling water and cook 15 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
  6. Add sour cream and parsley and mix 1 min / 100°C / speed 1 / Reverse.
  7. To serve, pour pork on top of egg noodles.
  8. Garnish with additional sour cream if desired.

    Hi, I need to double the quantities of ing. (8 people) - how do I adjust times & will it all fit in the bowl?

      Natalie I would just add 5 more minutes to the pork cooking time. It should all fit if you double it - just keep an eye on it that it doesn't go above the line in your TM bowl.

    Delicious. I halved the amounts and reduced cooking time accordingly. Worked well. I added poppy seed to my noodles for extra texture.
    I'll be making this again.

    Love this! Mr 12 made this for me and the neighbour. He doesn't like mushrooms so we halved the amount of mushrooms to still get the flavour. Served it with gluten free pasta. The neighbour raved about it. Was very yummy.
